There’s nothing worse than having a party-filled weekend and feeling a little rough when the working week begins. You’re hungry but at the same time you’re picky about what your stomach can handle. What do you do?
Why not try something that’s light and healthy and also delicious and won’t leave you feeling stuffed.
Let’s try a vegetable stir fry with cottage cheese. Easy to make and very quick!
What you need:
red, green, yellow peppers
Chop the peppers into slices, then slice the onion and the sausage (slicing the sausage is optional).
Fry the sausage in a little bit of olive oil for about 2 minutes. Then add the veggies and cook together until the peppers are nicely soft but still slightly al dente.
Once they are done serve in a bowl or plate and top it with a spoonful of delicious cottage cheese.
The result is a great light lunch that will keep you going for the rest of the day! A big thank you goes to my good friend Max for the suggestion.
