The Sunshine in a Pot

Hi folks and welcome back! It’s always a pleasure to have you here!

12.45 on a Monday, Lunch break is coming up at work and I am wondering where to have lunch today. This weather makes going home to eat a bit of a quest. So I decided to just run to one of my favorite places – the Canteen.

Most of the time I go for a flat bread, either a New Yorker or a Tuna melt. Today I just felt like a salad would really hit the spot. That doesn’t happen very often. This salad can easily be made at home as well.

Here’s what you need:

Couscous
Hummus
Rocket Leaves
Cherry tomatoes
Olives
Spicy mushrooms
Chicken bits

The result – one of the best salads I’ve ever tried:

Couscous Salad

The couscous goes really well with the hummus, add some rocket, chicken, olives and pickled mushrooms and chilli citrus flavored dressing and you got yourself a winner.
