We’ve all been there, Tuesday evening a few friends come by to watch a movie and you haven’t got much food in the fridge. What do you do? Maybe call Domino’s or that nice Chinese place around the corner.
Or you could whip something up that takes about 15 minutes to make and costs about £8.
That’s what happened to me last week when I had some friends over and I was completely unprepared for guests. We decided to go to our local supermarket and get something. Once we were there, someone suggested something light and quick. So fish it is then. Cooking fish is probably the easiest and you can always find some fresh fish at your local market or supermarket. We decided to go with salmon fillets and some potatoes, which then became potato salad.
What you need:
600g new potatoes
3 spring onions
3 boiled eggs
1 tablespoon of balsamic vinegar/red wine vinegar
3 tablespoons of virgin olive oil
1/2 tablespoon mustard (optional and Dijon works well)
That’s pretty much all you need to make this meal.
First, we need to cook the potatoes. The new potatoes are usually quite small so you only have to cut them in half and the really small ones you can leave them in one piece.
Wash them really well under cold water then let them cook for 15 minutes, until they are tender. Then cut the spring onions in thin slices.
In the meantime boil 3 eggs for about 5-6 minutes. Then remove the shell and cut them in small chunks.
While we’re waiting for the potatoes to boil we take the salmon fillets and fry them for about 5 minutes on each side on a medium flame. Make sure to use a bit of olive oil.
By now the salmon is ready and the potatoes should be done as well.
Voilà! The salad is ready!
Next you serve it and enjoy a fairly light but very delicious dinner. All this can be done in 15-20 minutes
